Paleo Apple Nut Crumble

The holidays are here and that means sugar. It’s everywhere! For those of us working to eliminate sugar, it can be a trying time. But there are ways to enjoy dessert in a healthier way. Try my healthier take on a winter favorite: apple crumble. It is gluten free, grain free, and processed sugar free. Also it incorporates healthy fats, spices, and nuts. Enjoy guilt free!

Paleo Apple Nut Crumble

Ingredients

Crumble topping:

1/3 cup organic extra virgin coconut oil, ghee, or grass-fed butter

1/2 cup pecan halves

1/2 cup walnuts or almonds

3/4 cup blanched almond flour

2 tablespoons maple syrup or honey

1/2 cup unsweetened coconut flakes

1 teaspoon vanilla extract

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon fine ground sea salt

Apple filling:

6 medium apples peeled, and sliced to 1/4 inch thickness — try Pink Lady, Honeycrisp or Fuji (these apples are high in acidity and a firm texture — which is good for cooking)

1 1/2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

3 tablespoons coconut sugar

1 teaspoon vanilla extract

1 tablespoon arrowroot flour

Instructions

  1. Preheat oven to 350° F.
  2. Place all the ingredients for the crumble topping in a food processor and pulse a few times until the nuts and apples are broken into small pieces. Chill in the refrigerator while you prepare the filling.
  3. In a large bowl, toss the sliced apples with the spices, arrowroot, coconut sugar and vanilla. Transfer to a 9 inch pie dish or a baking dish and set aside.
  4. Spoon the topping all over the apples to cover. Bake in the preheated oven for 40-45 minutes or until the apples are bubbling and the topping is light brown and crisp. After 30 minutes, check the topping, if it’s too brown, cover with aluminum foil for the last 15 minutes.
  5. Cool for at least 30 minutes before serving warm. Serve alone or with a dairy free ice cream. Enjoy!
